It’s the last day of January and I’m still not yet done with my holiday diaries!  I’ll get it done…somehow….someday. :P  I’ll continue where I left off.  Oh, may I just warn you that this is going to be a picture heavy entry.  New camera, remember?!  :D
28 December 2007 - Dallas Day 1

Today is the first day of our 3-day/2-night Dallas weekend getaway.  This is my Mom’s first trip to Dallas and the second for the rest of us.  Although last time, we practically just drove by Dallas and spent most of our time in Arlington…at Six Flags.  We planned on leaving at 9am but as always, we left later than the appointed time.  So late in fact that our getaway technically became a 2-day/2-night thing.  Hee hee!  It was already almost 3pm when we reached downtown Austin.  But no worries, we weren’t in much of a hurry anyway.  And that’s just how vacations should be taken…leisurely. ;)

We reached our hotel, the Hampton Inn around 6pm.  Hubby is a Hampton Inn suki while it was a first brush with the hotel for the rest of us.  It was love at first sight for me.  True, it’s no 5-star hotel but it’s got everything one will need for a comfortable stay….free internet access, free buffet breakfast, a small gym, and a pool (but who swims outdoors in winter?).  The beds are very comfortable with pillows that are not overly fluffy.  There’s even a lapdesk!  This particular hotel had a microwave and refrigerator, too!  The bathroom was a little cramp but it boasts of a bathtub and fresh white soft towels. :)

We only stayed in the hotel briefly ater checking in and headed out the door to salvage what was left of the day.  It was early evening but we did manage to spend about 2 hours at one of Dallas’ tourist attractions…the Galleria Dallas.  Nyahahaha!  Gabi na, wala nang mapupuntahan…kaya mall na lang! ;) 

Galleria Dallas is a shopper’s haven, if I may say so myself.  People who go ga-ga over name brands will love it here while the more, er, practical, among us will also find shops that will suit their budgets.  Hahaha!  And there’s an ice skating rink too!  Abby loved watching the skaters on the ice.  She watched them so intently.  Maybe sometime soon, she can skate on ice, too.  We’ll see.

We didn’t come here to shop.  Promise!  We just wanted to “take a look”. ;)  If anything, our purpose was to have dinner!  We ate at  a Japanese fastfood and we all smelled of chicken terriyaki by the time we were through with dinner.  Abby played for a few minutes at the children’s play area and by 9pm, we were already making our way out of the mall.  We needed to get some shut-eye soon as tomorrow will be a long day.  We have to take in as much of Dallas as we possibly could.

29 December 2007 - Dallas Day 2

Today’s going to be a long day and we woke up early, eager and hungry for sightseeing…and breakfast, too!  Hahaha!  My Mom and I were pretty impressed with the hotel’s breakfast.  Normally, smaller hotels only offer coffee and an assortment of breads for breakfast.  But here, there were eggs and bacon, fresh assorted breads and pastrires, a variety of cereals, coffee, tea in different flavors, fresh fruits, yogurt, etc.  It looks like we can afford to have a late lunch today!  Yey!

Dallas Arboretum

After a hearty breakfast, we drove off to our first stop…the Dallas Arboretum.  It is very rarely that my Mom gets time off to relax, which is why this month-long vacation with us is such a welcome detour for her.  And one good way to destress is to be “nurtured by nature”. ;)  We took a 3-hour leisurely stroll through all the gardens that make up the entirety of this beautiful place.  Every now and then, we would pause, take lots of pictures and let Abby run wild on the grass. 

Because it’s winter, most of the prettier flowers were not in bloom.  If one is fond of leafless trees, then this is a good time to visit.  Hahaha!  I made hubby promise to bring us here again in spring time..”when the flowers are in bloom…we’ll walk into the meadows…in all that sweet perfume.” Heard of that song? ;)

West End Historic District

From the Dallas Arboretum, we drove to Downtown Dallas’ West End Historic District, one of the city’s leading tourist attractions.  I dare say that when one has been to West End, one has definitely been to Dallas. :D  Cold as it was, we spent the rest of the day exploring the district on foot.  I have plenty of pictures again kaya sabay na lang ang kuwento at litrato, ok?  :D

As you can see, West End has so much to offer including, but not limited to, history and food. ;)

We had lunch at the Spaghetti House (or is it Factory?  Whatever!)  It was almost 3pm and we were starving. 

For $35, a family (or group) can comfortably tour the district on one of these horse-drawn carriages. 

I love brick roads!  Streetcars run the length of Market Street.

The Sixth Floor Museum at Dealey Plaza  - This site was the location of JFK’s assassination and on the 6th & 7th floors of this building is a permanent exhibition detailing the life, death and legacy of JFK.

In the evening, we drove to another part of the historic district so we can do some more walking…at Victoria Park.  We visited the American Airlines Center, an all around events venue but better known as the home of the Dallas Mavericks, Stars and Desperados.

As a special treat for being a good sport the whole day, Abby got to ice skate for the first time. :D  She always seemed interested in ice skating so we let her decide for herself if she wanted to do it or not.  She finally agreed after walking around Victoria Park. :D  This was how she and hubby looked in their early minutes on ice.

After two gruelling rounds of the outdoor rink, mukha ng expert…but still unable to skate on her own.  Next time, perhaps?

We had a quick dinner at Jason’s Deli before finally calling it a night.  ;)

28 Jan 2008 Tuloy ang Ligaya

Mabuhay! :)  I’ve been struggling quite a bit to post entries more than once a week.  But it’s a good kind of busy which is keeping me from blabbing blogging as often as I used to.  In case anybody’s wondering, my Mom is still vacationing with us.  Yipee! We were able to buy ourselves a few more days of ”together time”! ;)  My Mom was supposed to fly back to Manila Friday last week, a good 10 days before a scheduled business trip to Germany.  But we found out a few weeks ago that a roundtrip airfare from the US to Germany was way cheaper than if my Mom were to fly from the Philippines where the airfare is 50%-70% more expensive (depending on the airline)!  For only $75 dollars (rebooking fee), we got ourselves 11 extra days (plus a few bonus hours!) to be together…which is actually priceless.  Hahaha!  Kaya, tuloy ang ligaya! :D

Some may be wondering whatever happened to my other site, MunchkinCafe, which has been missing in action for more than a week already (feeling may nakakapansin!).  Well, my friend, Thess, who was gracious enough to host the site for me, encountered some problems with the server.  I won’t bother you with the details, which a technology-challenged person like me doesn’t really comprehend anyway.  To make a long story short, the site is pffft for now but it may resurface again somewhere else.  For the meantime, you shall hear about all my kitchen experiments and other food adventures here.  Kaya, tuloy pa rin ang ligaya! ;)

One of three desserts I made for our Christmas dinner was Cocoa Mousse.  I thought I’d give baking muffins, brownies and cookies a rest and try something new, that is, something I have yet to do.  It was a toss between cocoa mousse and chocolate cream puffs.  I chose the simpler of the two…the cocoa mousse.

It was a very rich chocolate dessert and very easy to make.  If there’s something that’s keeping me from being 100% satisfied with the finished product, it’s the unemelted cocoa granules that was still ever present.  I’m thinking next time, I’ll probably press the cocoa with a spoon first before dumping it into the saucepan to make sure every bit of cocoa dissolves and no tiny balls end up in the serving cups.  :D

If you’re a chocolate lover like me and want to give this chocolatey goodness a try, here’s the recipe:

Cocoa Mousse

1 can (14 oz) sweetened condensed milk

1/3 cup cocoa

3 tablespoons butter or margarine

2 cups (1 pint) cold whippint cream

Note:  If you want to make it into a Cocoa Cappuccino Mousse, add 2 teaspoons dissolved powdered instant coffe or espresso.

-  Combine sweetened condensed milk, cocoa, butter and coffee in a medium saucepan.  Cook over low heat, stirring constantly, until butter melts and mixture is smooth.  Remove from heat; cool.

-  Beat whipping cream in large bowl until stiff.  Gradually fold chocolate mixture into whipped cream.  Spoon into dessert dishes.  Refrigerate until set, about 2 hours.  Garnish as desired.

Makes 8 servings.

Prep Time:  15 minutes

Cook Time:  10 minutes

Chill Time:  2 hours

Howdy y’all?  How was your weekend?  I hope you had a great one as did we. :D  With your permission, I will now continue with my holiday diaries as it is my goal to get it all out before the end of January.  Hahaha! :P
24 December 2007 - Christmas Eve

On Christmas Eve, we had dinner with the Trans (my friend Bet’s family) and the Umalis (family of Bet’s sister, Ate Aileen) at our usual party place, which is Bet’s house.  Bet’s Mom, Tita Lourdes, who was vacationing from Turkey was also there to join us. :)

As always, we devoured every one of the dishes that Bet prepared: pancit, squid kebabs, steamed shrimps, fried spring rolls and for dessert, fruit salad.  We also had a round or two of champagne. ;)  I can’t get over how much we ate that evening! :) 

We arrived at Bet’s house at around 7pm and stayed there for a total of 4 hours, not leaving until it was already around 11pm!  The kids played amongst themselves, the older ones playing with the Wii and the younger ones with more age appropriate toys.  Hahaha!  Hubby and Tony (Bet’s hubby) got to play 2 rounds of pool, and I mean the real thing and not the Wii thing! :)  We girls did the most logical thing to do, which was talk.  Hee hee!  Oh, Bet and I played with our own new toys as well (click! click!)!  The kids kept asking if they can open their presents so we moms relented and allowed them to open one present each.  The rest will be opened tomorrow morning. :) 

Abby fell asleep in the car on our way home and just deligated the preparation of Santa’s cookies and milk to me.  Hahaha!  When 12mn came, hubby and I were still so full that we had to forego having noche buena.  Our minds were really willing to eat, but our bodies were practically begging us not to!  We even bought food for noche buena: freshly baked bread, prosciutto, salami, sweet ham, brie cheese and one other kind of cheese.  Oh well, these will all just have to wait in the fridge.

25 December 2007 - Christmas Day

Today was our first family Christmas away from home.  I’ve had the chance to celebrate Christmas in the US in 1991 and it was a little too blah for me.  This time, it was going to be different, in more ways than one, but definitely fun!  It’s no secret that a Philippine Christmas is simply the best, but since we are miles away from home, we were definitely not going to sulk in one corner and weep. ;)

We woke Abby up at 8am and happily informed her that Santa left presents for her in front of the fireplace.  There was also one for me and another for hubby (from Mrs. Claus). ;)  Abby got everything she asked from Santa…a musical instruments showcase: drums, tambourine, maraccas (did I spell it correctly?) harmonica and a Barbie guitar complete with headset.  Seeing her so happy was just priceless! 

Somebody’s gonna be making noise music!  Abby’s still wearing the top she wore the night before.  Hee hee!  She even has a sticker on her face which she refused to take off! :)
It looks like we’ll be making more videos of Abby singing her own compositions. :)

We heard mass at 10am and when we got home.  We took a lot of pictures of Abby and of our family.  Thank God for self timers on cameras!  After our “photo shoot”, Abby got to open some more presents…but not all.  She opened her presents one at a time throughout the day.

I spent most of Christmas Day in the kitchen preparing for Dinner.  Bet and Ate Aileen and their kids were our guests this time. :)  Nothing too fancy for dinner…just pasta with shrimps in white sauce, baked white bass, chicken afritada and lumpiang hubad.  For dessert, I made some chocolate mousse in individual cups, bread pudding and of course, leche flan!  I have to say that I’ve had better days in the kitchen.  In my rush to have everything done and ready by 7pm, the potatoes in my afritada came out undone!  Oooops! :D

The days leading to Christmas has been a lot of fun…moreso yesterday and today.  While we do miss being with family and friends, we still couldn’t complain.  Presents wise, we got a lot to speak off!  But Abby is and will always be the run-away winner!  Hee hee!  She received presents from some of her classmates, her teachers, her Dady’s colleagues, my friends (hi Tita Meeya & family and “Tita” Nelli!) and her Austin Titas (Tita Bet and Tita Aileen).  A week or two before Christmas, Abby even got packages from her Ninang Pinky and Tito Keith who live all the way in KSA!  That only goes to show that in this day and age, there’s no more excuse to be a “delinquent” ninong or ninang!  Hahaha!  (Bato-bato sa langit!).  I don’t recall receiving so many Christmas cards since this Christmas!

Today is only the first day of Christmas and to us Catholics, Christmas doesn’t officially end until the feast of the Three Kings.  And if the last two days were any indication, I have to say we are off to a good start.  Bring on 2 more weeks of fun! :D

We continued to receive Christmas blessings today….the biggest and best of which is my Mom who arrived at half past noon.  Now I can say that Christmas has truly arrived!  Yey! :D  We told Abby we were going to the airport to pick up a special guest.  She fell asleep in the car on the way to the airport and when she woke up, it was my Mom whom she first saw.  Abby couldn’t help but smile!  And I thought she’d be cranky coming from a nap!  From the airport, we drove straight to Sushi Sake for a hearty Japanese lunch.  We made a quick stop at the supermarket as well before heading straight home.

Abby wouldn’t let her Mimi out of her sight and followed her around like a lovesick puppy.  Hahaha!  She helped open the suitcases and was happy to receive some more presents from 3 more godparents: Ninong Edward and Ninang Claire and Ninong Cezar. :D  Abby’s former yaya, Yaya Amor, who continues to stay with my Mom also sent Abby presents.  Hubby and I were also very happy with our loots!  Big thanks to the Cuenca Bunch…that would be Edward & Claire, Jad, Kylah, Macy and Sophie! ;)

A few months back, I posted video clips of Abby during a “bedtime concert”.  The second clip in that entry had Abby singing an original composition, “Show Me”.  Last night, during an American Idol commercial break, Abby was at it again, belting out one of her, er, original compositions.  We haven’t given the song a title yet and we’re very much open to suggestions.  :D

Here’s the short video clip.  It’s my Mom you’ll hear clapping enthusiastically in the background and saying, “Aaaaaay!” in the end.  I contributed a hearty giggle during the take as well.  Hee hee. :D


How did you like Abby’s big finish?  At the rate she’s going, we might just get a call from Ellen Degeneres.  Nyahahaha! :P  Holiday diaries part 2 coming up…tomorrow perhaps?  Hee hee!  It will all be over and done with before the end of January. ;)  I hope everyone’s week is coming along just fine…better than fine! :)  God bless, y’all!

When I came to Abby’s school at around 11:45 to pick her, I was surprised to see a lot of the kids hovering by the door, where Abby usually waits for me alongside her other classmates who go home at noon.  As soon as the children saw me, they almost shouted in unison, “Abby’s crying!”  And they all pointed to Abby who was slumped on the floor crying with matching “hikbi”.  I rushed to her side, gave her a hug and asked her what was wrong.  She couldn’t speak because of her uncontrollable sobs.  And then somebody volunteered the answer, “The teacher took her candy cane away.”

Ms. Jessica, one of Abby’s teachers, enlightened me.  Poppy the Clown came to school today to entertain the kids and after her act, gave away candy canes.  Sweets are a no-no in school, but in the spirit of the holiday season, the kids were allowed to keep their candies which they can enjoy only after they finish their lunch.  Abby decided to take a “short cut” and threw her banana in the trash.  That’s why the candy cane was taken away from her. :) 

After Abby calmed down, Ms. Viola, the head teacher in her class, held the “confiscated” candy cane in front of Abby and assured her that tomorrow, Abby can have it after she finishes her lunch.  The candy cane will be put back in her cubby and will be waiting for her tomorrow.  Ms. Viola said she was sorry she had to take it away from Abby.

Abby was ok with the “deal” Ms. Viola came up with.  Whew!  In the car and several more times at home, I reminded Abby that it’s not nice to throw food away and explained to her why the candy was taken away from her.  She would nod in understanding.  I hope she doesn’t forget that tomorrow. ;)

When I dropped Abby off this morning, we found the candy cane in her cubby.  Before I left, I reminded her again that she can have it later in the day after she finishes her lunch.

At the usual time I pick Abby up, I was back in school and was very surprised that Abby is still asking for the candy cane!  Uh-oh, she probably didn’t eat her lunch again!  Ms. Viola came out of the classroom and told me she didn’t let Abby have the candy cane yet again.  Abby knew the deal that she had to finish her lunch first before she could have it.  So she came up with a grand plan.  During lunch time, she went around the classroom, offering her lunch to her classmates!  She was asking them to eat her sandwich for her!  She even asked Ms. Viola, “You eat my sandwich?”  Naturally, Ms. Viola said no, she won’t eat Abby’s sandwich. 

After hearing the story, I had to keep from giggling myself.  Ms. Viola handed the candy cane to me and let me decide what to do with it at home.  I explained to her that Abby also isn’t allowed to eat sweets until after she has eaten her meal.

Haaay, Abby!  You’re such a smarty!  I have to say, I’m so proud of you.  Hee hee!  Now that’s what they call, “maabilidad!” ;)

Today was Abby’s school “holiday party”.  That’s the generic term for Christmas party.  It’s not like the holiday parties we are used to back home as it was stripped of whatever funfare that is usually associated with Christmas parties.  The party was just lunch made special by the presence of some of the children’s parents and special treats for the children.  About a week or so before today, a list of what parents could bring to the party were posted by the entrance of Abby’s classroom.  We volunteered to bring the non-fruit snack.  The other parents brought holiday plates and utensils, goody bags, fruit snacks and desserts. 

The non-fruit snacks we brought were ham & cheese sandwiches in the holiday shapes of gingerbread, Christmas tree, snowman, etc.  I used the cookie cutters I got on sale at Wal-Mart.  We also brought corn dogs, but this time, I took the much less complicated route of simply buying frozen ones and heated them up in the oven.  There were no games, no dance numbers, nothing.  But it was fun for everyone just the same.

Other than hubby and myself, 5 other parents attended the holiday party, and three of them read stories to the children.  I decided to take pictures instead. ;)  I really enjoy being around Abby and her classmates.  They are such a joy to be with. :D

Today is the year’s last school day and parents were again invited to watch their children during dance class.  Hubby and I were just too happy to oblige. :)  The girls are just getting better and better, Abby specially. ;)  Hee hee!  Because the weather has become so much colder, we bought Abby long-sleeved leotards.  Too bad she had to take off her tights before the class began because on the way to the school, Abby pulled a thread from her tights which resulted in an unsightly hole.

My First Haircut

I finally got a haircut today.  I just have to say that I miss Matt, my hair’s main man.  He has been cutting my hair and doing my make-up for formal gatherings (including my wedding!) for the last 8 or so years.  Next to Matt, I miss the Pinas prices for salon services and the pampering I get from Emphasis Salon of the Peninsula Manila.

At first, I thought I’d get my haircut at Toni (Or is it Tony? Whatever!)  and Guy but had to do an about face after I saw that the rate for a haircut is $44.00 if done by the “artistic director”.  Hmp!  I went to another salon instead, the name of which now escapes me.  I ended up paying $35 dollars including tip.  Next time, I’ll probably give Cost Cutters a try.  Haircuts there are only around $15.  ;)  Oo na, kuripot na kung kuripot!  Hahaha! :D

Trail of Lights

We got word from our neighbor that tonight was the last night of the Trail of Lights at Zilker Park in Downtown Austin.  Not wanting to miss out on what probably was the most christmassy display in Austin, we braved the mid-30s weather and went.  Traffic on the way to the park was on the heavy side.  It looked like the entire Austin population decided to go to the Trail of Lights on the last day.  Grrr!  The park was a virtual ocean of people!  Nevertheless, we didn’t regret going. :)

We really have to get out of the house on weekends even if it means going through the hassle of wearing layer upon layer of clothing!  Brrrrr! ;)

The entrance to a magnificent display of lights.  It is actually more crowded than it looks.  That night, there was no such thing as personal bubble.  It was almost as bad as riding the MRT on rush hour!

Would you look at that!  I didn’t even make it all the way to Christmas! :D  If I may borrow my friend Meeya’s words, “Holiday kwentos are quite a bit delayed but, like the miracle of childbirth, nai-ire din ang kwento.”  In my case, it’s gonna take more than just one big “ire” or worse, it might ultimately end in C-section much like what happened in real life. :)  So bear with me please!  I so admire bloggers who are able to update regularly.  How do you do even do it? :)
